Preparing for Easter Dinner: The Menu

I am so excited that we are hosting Easter dinner once again!  Last time we hosted was in 2010.  We did not have Easter last spring because we had just hosted Logan's very large baptism at our house.

And OF COURSE our small bathroom is out of commission because we have a leak which pushed our renovation project WAY up.  So we are in the process of tearing everything out of the bathroom and chances are it won't be back in working order by then.

Since I am going to be busy with rehearsals for the next two weeks, I am getting a jump on planning our meal and desserts, as well as finding inspiration for table settings and decor from Pinterest.  I feel like Easter can be a DO ANYTHING meal, and I find it hard to plan a good menu, but here is what I have in progress:

Appetizers:
Nutella Dip with strawberries
Veggie tray
Cheese tray

Main Dishes:
Baked Ham
Eggplant Parm

Side Dishes:

Potato Salad
Spring Salad with strawberries and goat cheese
Some other veggie side dish..roasted asparagus?


Desserts:
Pioneer Woman's Carrot Cake
Coconut Icebox Cake
Pretzel Hugs

We have been hit

Hit by the flu.

Logan started throwing up on Thursday night.  Saturday night, Chuck got sick.  Sunday morning, I got sick.  So Sunday was the worst day because we were BOTH down for the count.  I felt so bad for little man because he had just started to feel better.  By Sunday night, Chuck was feeling better but I couldn't keep anything down.  So Monday was another day off for me.  And today I am home again because Logan is still having some potty issues and I want to make sure he is cleared up before going back to his sitter's.  So three days off of work at the end of the marking period when the email AND grade entering system is down?  Not so much fun.

The only bonus of these days off and being sick?  Having extra snuggle time with this handsome fella.

Weekend Planning Blog Hop



It has been quiet the whirlwind of a week around here, culminating with a sinus infection for me and the flu for the little man.  There is nothing worse than watching your 15-month old throw up every 20 minutes on the dot.  Not sure what my Friday is going to hold, but he seems to be feeling better, hasn't thrown up since 1:30 AM and has eaten two pieces of toast.


Friday:

  • Midnight showing of Hunger Games!  Review to come!
  • Deal with sick little man
  • Start planning for Easter!
  • As long as he is feeling better, bake something, do some cleaning, NAP because it was a rough night.

Saturday:

  • Rehearsal
  • Fundraiser for my brother's softball team
  • Perhaps some cleaning in there
Sunday:
  • Since I am losing out on my work time at my inservice on Friday, I will be spending the day grading and getting ready for a long week of rehearsals

Utility Tub Skirt

Our utility tub is awful.  But honestly, I have looked at it and how well it is secured to the wall and it is just not worth the trouble to remove it (especially now that we think we have a link in our bathroom.  Awesomesauce).


Anyway, I keep a bucket, trash can (overflowing at this point...awesome).  and the extra cat little usually under the tub and I wanted a way to disguise it.  I googled around for some ideas and pieced together a way to create a skirt for the utility tub.

First, I bought some clearance brown and blue vine-y fabric from JoAnn's on Friday,  I bought 3 yards, knowing I was going to create a front and only one side, because the second side butts up to the washer and I didn't feel it necessary to cover it.  Oh, and I bought all the fabric they had :)

Second, I measured the sides and added on one inch per hem so I could fold it over.  And for this project, I decided to use hem tape and NOT bust out my mom's ancient sewing machine.

So, I cut 3 panels, the front, the side and one for the corner to give it some room and so we could easily access what is stored under it.

Then, I folded over the hems, allowing approximately one-inch per hem fold.

Accuracy is overrate.

After ironing all the hems, I did a quick stitch to hold the corner panel to the two large panels. 

I lined the top of the tub with adhesive velcro and secured the panels.

I am so excited about how it looks!!  What a difference!!

Weekend Planning Blog Hop



Another weekend is here!  And not soon enough!  I am lucky to have today off to take the little man to his 15 month appointment, so I am hoping it will be a productive Friday!


Friday:

  • Make menu and grocery lists
  • Target
  • Mall for Easter outfit for me
  • 30 Day Shred while little man is napping 
  • Clean kitchen, dust, vacuum, mop kitchen
Saturday:
  • Finish whatever cleaning did not get accomplished yesterday
  • Grocery store
  • Corned beef!
  • Hang out at home and relax
  • Make a cake for a friend
Sunday:
  • Plan on doing a family activity...not sure yet!
  • Dinner!

Weigh-In Wednesday (on Thursday)

Tuesday's weigh in results:
+.4 lbs.

WTF.

I was so unhappy with this.  I tracked what I ate, wrote it down...even the astronomical amount of points from the fish fry we ate at on Friday.

I am chalking it all up to water retention and hoping to have an awesome week next week!

And we started the 30 Day Shred on Wednesday and I am certainly feeling it today!!

Weight Watching

Back in May of 2008, I made my first blog post.  Originally, this blog was geared towards documenting my weight loss battle.  Since then, I have been right around the same weight for the last two years.  I am currently at my pre-pregnancy weight but I know that this is not good enough.

I am having visions of my summer, filled with days of chasing after a very energetic 18-month old boy at the weight I am now.  Not good.  (and not pretty).

Anyway, aside from that, I now hate shopping.  Most of my wardrobe doesn't fit for spring.  And I just can't go shopping for stuff that fits if I hate it!

So, when our wellness coordinator set up a Weight Watchers at work program, I knew this would be perfect.  I have a hard time fitting in meetings right now, with rehearsals and Thirty-One stuff, and being a MOM, so this was what I needed!  The meeting is in the building next door to us and I can zip over for 30 minutes during rehearsals when my assistant director is there.

So, for two days now I have been completely on track and I am REALLY proud of myself.  Fingers crossed it stays that way!  I will be having Weigh In Wednesdays from here on out, since I WI on Tuesday and I will post my gain/loss on Wednesday.

Weekend Planning!

The weekend is here!  I feel like this week has dragged on.  Perhaps because I am into rehearsals and staying late at school already.  It is taking its toll on me, that is for sure.

Friday:
  • Order pizza
  • Thirty-One party
Saturday:
  • Thirty-One Celebrate and COnnect Meeting
  • Do some cleaning
  • Night at the Races fundraiser
Sunday:
  • Thirty-One party
  • Grocery shopping
  • Cleaning
  • Food prep for the week
A little busy, it seems!!  I hope I start feeling better so that I can get motivated to do some cleaning!!
