Menu Plan Monday!

Monday: Kabobs on the grill (marinated in some sort of concoction that I created with soy sauce and stuff), wild rice and broccoli
Tuesday: Sausage and pepper sandwiches (made in the crockpot) and some sort of veggie
Wednesday: Sloppy joes and fries and green beans

Why do I want these?

I mean seriously. I have to wear gloves when doing lots of dishes because my hands are so dry. And for some reason...I want these!!

Blast from the Past

Has someone from your past (ex-significant other or not) ever come back in? Not to renew a relationship or anything, just kind of...accidentally.

This has happened to me.

I find it emotionally draining. Not only am I sad because I am not involved in the musical anymore (a difficult choice I made last year), but this person is. The new director (and my very dear friend) had no idea when she brought this person in. When the connection was realized, I was shocked. Because this person was in my life for a few years.

Needless to say, it is going to be an interesting weekend.

New love!

I have never had a kitchen floor that I have really cared about.  When living in an apartment, it was often an area I would occasionally sweep, but honestly, I would usually forget about it (especially because they were not that pretty).  Now that I love and adore my kitchen and new floating wood laminate floor, I wanted a quick, easy way to mop up.  I bit the bullet and bought the Swiffer Wet Jet.  I SIMPLY LOVE IT.  Wow.  It was such a quick, easy way to mop up the floor after a quick sweep up!

I highly recommend it!

Incomplete

The technical end date of our internship is May 5.  I have opted to take an incomplete and a few additional weeks to finish up some projects and turn everything in before the end of May.  My ultimate goal is to have it all done except my major 50-hour (out of 300) project, which will be completed upon the close of the senior recognition ceremony on May 19.

As much as I want it to be done and over with, I refuse to kill myself to get this done.

I don't think I have ever been so...apathetic...about anything ever.  I think because my internship has just shown me that this is exactly what I am NOT ready for in life.

I think I will remain in my Kleenex-sized box of a classroom and enrich the minds of young people.

In an attempt to get my finances back together, I am back to Menu Planning Monday. I have realized that when I do not have a grocery list at the store, I spend like a fool with no direction and buy stupid things that I do not need and will not use.  We need to reign in the spending, now that we have added expenses with the house.  So, here goes!

Pear-Raspberry Bundt Cake

Pear-Raspberry Bundt Cake
When I saw this in this month's Weight Watcher magazine, and immediately had to bake it. It was amazing. Unfortunately, I ran out of powedered sugar, so my glaze was too runny, but we just scooped it up and plopped it back on top! C loved the cake and refused to take it to work so that we could have the leftovers! And it is kind of healthy!

Cake:
2 (15-oz) cans drained pear halves in light syrup, drained
1 (181/4-oz) box yellow cake mix
3/4 C buttermilk
1/2 C fat free egg substitute
1 tsp vanilla extract
1/2 tsp almond extract
1 (6-oz) container fresh raspberries

Glaze:
1 C confectioners' sugar
2 Tbsp orange juice
2 Tbsp sliced almonds, toasted

1. Preheat oven to 350. Prepare a 10-inch bundtpan
2. Puree the drained pears in a food processor (I used an immersion blender). Transfer to a medium saucepan and bring to a boil over medium-high heat. Reduce the heat and simmer, stirring often, until the puree is reduced to 1 C, about 15 minutes. Transfer to a bowl and freeze until cool, about 15 minutes.
3. With an electric mixer on low speed, beat the cooled puree, cake mix, buttermilk, egg substitute, and vanilla and almond extracts in a large bowl until blended. Increase the speed to medium high and beat until well blended, about 2 minutes. Gently fold in raspberries.
4. Pour the batter into the prepared pan, ; spread evenly. Bake until a toothpick inserted into the center comes out clean, about 45 minutes.
5. Let the cake cool in the pan on a rack 25 minutes. Remove the cake from the pan and let it cool completely. At this point, you can wrap it well and freeze it for up to two months! TO serve, let stand at room temperature until thawed, about 4 hours.
6. Whisk the confectioners sugar and orange juice in a bowl until smooth. Pour glaze over cake, letting some drip down the sides. Sprinkle with almonds and let stand until set, about 1 hour. Transfer to a plate.

Even though I do not LOVE the color of the counter and tile, I know I have to live with it until we can afford to replace it. The counter is in good condition and the green looks awesome with it. I can honestly say that I love my kitchen!

Fresh Berry Cake

I saw this post on Katie's blog awhile ago while looking for a different recipe and wanted to give it a whirl for Easter. Nothing like fresh berry-yumminess for a spring holiday! I will agree with Katie, that it would be just as yummy without frosting. And for some reason, my berries sank and did not spread throughout the cake, so it is definitely not as pretty as it should have been. I had a ton of leftover berries, so I put the additional blueberries and raspberries over a very thin layer of buttercream. And I was really happy with the violets I made and how the final decorated product turned out!

Fresh Berry Cake
from Good Things Catered, adapted from Williams-Sonoma

Ingredients:
2 c. plus 4 Tbsp all-purpose flour, divided
1/2 tsp baking soda
1/4 tsp salt
12 Tbsp (1 1/2 sticks) unsalted butter, room temperature
2 1/4 c. granulated sugar
1 Tbsp Cointreau (I used fresh squeezed orange juice)
5 eggs, at room temperature
2/3 c. sour cream
3/4 c. blueberries
3/4 c. raspberries

Directions:
-Preheat oven to 350 degrees and prepare two 10in cake pans.
-In medium bowl sift together 2 c. plus 2 Tbsp flour, baking soda and salt.
-In bowl of large stand mixer with flat beater attachment, cream butter and sugar until light and fluffy, about 5-6 minutes, scraping as needed.
-Add the Cointreau and beat until incorporated, about 1 minute.
-Add the eggs one at a time, beating well after each addition.
-Reduce speed to low and add the flour mixture in three additions, alternating with the sour cream and beginning and ending with the flour.
-Beat each addition just until incorporated, stopping the mixer occasionally to scrape down the sides of the bowl.
-In the bowl the flour mixture was in, add berries and 2 Tbsp reserved flour and toss to combine.
-Using a rubber spatula, gently fold berries into batter.
-Spoon batter into prepared pans and bake until toothpick inserted into the center comes out clean, about 50 minutes.
-Transfer the pan to a wire rack and let the cake cool in the pan for 15 minutes.
-Invert cake to release from pan and let cool completely on wire rack before frosting and serving.

A Time for Change

Life has changed drastically in the last few months.

We became homeowners, being the numero uno on that list.

I am still sometimes (ok, very often) overwhelmed by the fact that this is OUR HOUSE. That for the next 30 or so years, we will be paying back the bank. But that this is our home.

Last night, while eating dinner with C and the girls in our dining room, I just looked around and I think it was that moment that it hit me. THis is our home.

And I am in love with it.

Although there are many aspects of being a homeowner that scare the beejesus out of me, I love coming in to my own house, even though it is still strewn with boxes and unpacked CRAP. It is slowly but surely becoming our home.

Perhaps it is this added to the freshness of spring and my internship coming to an end, with graduation from grad school looming, but I feel like this is a new beginning. I feel motivated and blessed and really want to make some major "internal" changes.

Oh and we now have internet and cable again, so I will be posting more, along with pictures of our house this week!!

Coming to you live, from Panera

I am still alive!  No worries!

We have moved in to our new house and as soon as our internet is FINALLY up and running, I will post renovation pictures and will begin posting once again!  Life has been insane and I have had no time to breathe.

I can not wait until everything goes back to normal once more!
