Weekend Recap/MPM

Last week was extremely mentally exhausting week at work.  We started rehearsals for what will be my last show as director and with meetings three times this week after school, I was drained.  And when Friday rolled around and I realized we had NOTHING planned, I could not have been happier.  Was my house a disaster?  Yes.  But I did not even care.  I worked on cleaning up slowly over the weekend and did lots of laundry, cleaned the bathrooms, swept and mopped the kitchen and laundry, and menu planned on Sunday.

What did we do Friday?  A was in bed at 8:30 (her choice) and we were asleep by 10 PM.

Saturday we went out to dinner BY OURSELVES.  Had some adult conversation.  It was great.

Here is the menu for the rest of the week.  Wednesday I will be posting a recap of how our Pantry Challenge went.

Sunday: Stuffed Cabbage Casserole
Monday: Pepper Steak
Tuesday: Chicken Chili
Wednesday: Unstuffed Pepper Soup
Thursday: Orzo with Broccoli and Carrots; Salad
Friday: Pizza night
Saturday: Something easy (I have a 31 party)

Peanut Butter and Chocolate Chip Biscotti

We are biscotti lovers. I love nothing more than brewing a fresh pot of coffee in the morning on the weekend and dunking in a fresh biscotti. I made this one for a family party a few months ago and forgot to blog about it! It was a big hit, but definitely was not peanut-y enough. I did not add the peanuts and the next time I make these, I definitely will because it needed that for a peanut-boost.
Peanut Butter and Chocolate Chip Biscotti

Ingredients
10 tablespoons unsalted butter (1 stick plus 2 tablespoons)
2 1/2 cups all-purpose flour
2 3/4 teaspoons baking powder
1/2 teaspoon fine salt
3 large eggs
1 1/4 cups sugar
2 teaspoons pure vanilla extract
1/2 cup smooth natural peanut butter, room temperature
1 1/4 cups dry roasted peanuts
1 1/4 cups semi-sweet chocolate chips or chunks

Directions
Position racks evenly in the oven and preheat to 350 degrees F. Line 3 baking sheets with parchment paper.  Melt the butter over medium heat, swirling the pan occasionally. Continue to cook until the butter browns and gets a nutty aroma, about 5 minutes. Let cool slightly.

Whisk the flour, baking powder, and salt together in a large bowl.

Beat the eggs in a medium bowl with an electric mixer until light and pale yellow, about 2 minutes. Gradually add the sugar while beating. Then slowly add the butter and vanilla until evenly mixed, about 30 seconds more. Add the peanut butter and mix until combined.

While mixing slowly, add the dry ingredients to the wet, in 2 additions, mixing just until absorbed. Fold in the peanuts and chocolate pieces.

Divide the dough evenly into thirds, and put each portion in the center of a baking sheet. Shape the dough with slightly wet hands into logs about 2-inches wide and 15 inches long. Bake until set and brown around the edges, about 25 to 30 minutes.  Cool logs on the baking sheets for about 10 minutes.

Lower the oven temperature to 325 degrees F. Carefully transfer the logs to a cutting board. Cut logs crosswise, with a long serrated knife at about a 45 degree angle, into 1/2-inch thick cookies. Place cookies cut side down on the baking sheets. Bake until crisp, about 8 minutes. Flip the cookies over and bake until golden brown, about 8 minutes more. Cool biscotti on the baking sheets. Serve.

Philly Cheesesteak Sloppy Joes

Oh my goodness.  These were so dang good.  I made them a while back and actually, I need to put them back on our menu SOON.  And the cheese sauce is what made this recipe.  Chuck said the leftovers were even better!!

Philly Cheesesteak Sloppy Joes

Ingredients
1 tablespoon olive oil
1 pound ground beef
1 softball-sized onion, chopped
1 green pepper, chopped
1/4 C steak sauce
1 cup beef stock
Salt and ground black pepper
4 dinner rolls
1 tablespoon butter
1 tablespoon flour
1 cup milk
1 cup provolone, shredded

Directions
-In large skillet over medium-high heat add the oil and then brown the ground beef, about 5-6 minutes. Add the onion and green pepper and cook another 3-4 minutes, until the vegetables start to get tender. Stir in the steak sauce and beef stock, season with salt and pepper, bring up to a bubble and cook about 2 minutes.

-Split open rolls and toast 'em up.

-While the meat is cooking, melt the butter in a medium-size pot over medium-high heat. Stir in the flour and cook about 1 minute. Whisk in milk, bring up to a bubble and let thicken, about 2 minutes. Turn off heat and stir the cheese.

-To serve, place a scoopful of the meat mixture onto the bottom of the rolls, then top with the cheese sauce and replace the top of the roll.

Taco Pasta

I randomly stumbled across Christy's blog one day and pretty much love everything she posts.  And I especially loved THIS recipe and when she said her kids loved it, I knew it had to be a winner.  And she was right...this was SO GOOD.
Taco Pasta
Adapted slightly from adapted slightly from Fake Ginger, as seen on The Girl Who Ate Everything,

Ingredients
1 pound ground turkey (you could use beef if you wanted)
8-12 ounces medium pasta shells or other small dry pasta shapes
1 small onion, chopped (about 1 cup) (I used half a large onion)
1 clove garlic, minced
1 (14 oz.) can diced tomatoes with mild green chilies, drained (I did not drain mine...whoops.  I just used less pasta water.  And I agree with Christy: If making this for kids, go the plain diced tomato route.  It was almost too spicy for Alexys)
1 packet (4 tablespoons) taco seasoning
3 ounces cream cheese
1/2 cup sour cream
1/4 cup chopped cilantro
Salt and pepper
Directions
-Bring a large pot of water to boil. Cook pasta according to the package directions. Drain, reserving 1/2 cup of pasta water. Set aside.
-Ia large skillet or sauté pan, cook the ground meat over medium-high heat until no longer pink. A few minutes before the meat is cooked through, add the chopped onion to the skillet. Once the meat is cooked through, mix in the garlic and cook until fragrant, about 30 seconds.
-Add in the diced tomatoes and taco seasoning and let simmer over medium heat for about 3-5 minutes.
-Stir in the cooked pasta, cream cheese, sour cream and reserved pasta water (I didn't need much because I left the juice in my tomatoes), and continue stirring until the cream cheese is melted and the sauce is well blended. Season with salt and pepper to taste.
-Simmer over medium-low heat 3-5 minutes to reduce the sauce a bit if it is still too thin.
-Toss in the cilantro right before serving for some fresh color and flavor.

Weekend Recap/MPM

Someone (yeah, me) forgot to blog her weekend plan for the blog hop (sorry Molly!).  Then when I went to recap...I also just can't seem to remember what we did this weekend!  Here are the things I can remember, in no particular order and I am not even sure on what day.
  • Played Mario Kart on the Wii
  • Made Baked Pumpkin Oatmeal (need to try it again...recipe needs tweaking)
  • Took Logan outside to play in the snow with Alexys
  • Went to a camera class and lunch with my sister-in-law
  • Stopped at HomeGoods and didn't buy ANYTHING
  • Stopped at Target
  • Watched some TV (Once Upon a Time and the Golden Globes...perfect way to spend a Sunday)
Um...yeah, that is all I can remember.  Oh, and we did some cleaning.  So how 'bout them apples?  Er, recap.  Whatever.

While I am at it, here is the menu plan for the week.  Still working on The Pantry Challenge  (check out my meal log here) getting ready to do a ton of freezer cooking in February as rehearsals begin for our musical (I can't believe auditions are this week!).  I know I am going to have to pick up some meat from the deli for lunches and eggs for pancakes but here is our menu for the week (I am making the pizza dough from scratch today):


Sunday: Skillet Lasagna
Monday: Buttermilk pancakes and hash browns
Tuesday: Chicken Caesar sammies, baked fries, corn
Wednesday: Not sure yet..something with ground beef because I know I have that in the freezer, lol
Thursday: Chicken corn chili
Friday: Stromboli and salad
Saturday: Mom and Dad's for my brother's birthday

2012 Home Goals & Projects

The Nester is hosting a 2012 Home Goals party, and since I have been meaning to do it anyway, I decided to participate and list out for you upcoming projects here at A Life in Progress! And this is also a peak into the disaster that the house was post-December madness (after a 1st birthday party, cookie exchange, Christmas dinner, and New Year's Eve party, it was a nightmare)

1.  Budget!  We are starting to implement Dave Ramsey's financial plan and I am attempting to get our (okay, MY) frivolous spending under control.  We need to do this in order to complete the home projects we want to do!

2.  New garage door

3.  Small bathroom: Install trim, new mirror, paint the vanity. 
4.  Complete the family room: Tear out the wet bar, give Logan a place to play and store all his CRAP.
And give Mama a place to craft!
5.  Pantry Project.  Big things planned.  Super excited.
6.  Landscaping!! 
7.  New front door/screen door/paint the front porch

Pantry Challenge Update

So, how is the pantry challenge coming along for me?  Well, when I started the challenge, I was under the assumption that my pantry and freezer were more well-stocked than they are.  So, on Saturday, I realized that we had no meat and were out of many lunch staples.  And really...nothing else in our pantry.

I looked at my goals for the Pantry Challenge and realized that it was, in fact, OKAY to go to the grocery store.  But I went with a different mindset.  I am aware that we are going to have to go next week for milk and bread and lunch meat, but that is okay.  For me, the goal is to be aware of my spending habits so we can create a budget.  I went to the grocery store and was very conscious of how much I was spending and what I was buying, in an attempt to make it last 2 weeks (I know we will have to stop for milk and some produce at some point).

Last week I spent $43.69 and yesterday I spent $176.25 on what I hope are two weeks worth of groceries.  I am hoping to spend less than $400 this month on groceries.  Now if I could just have SOMEONE teach me how to properly coupon, we would be in great shape!!

I am going to keep a running tally of how much I spend in groceries weekly as well as what we are eating daily for dinner as I participate in Life as Mom's Pantry Challenge.

Tuesday, 1/3/12: Dorito Casserole
Wednesday, 1/4/12: Frozen pizza
Thursday, 1/5/12: Grilled cheese and tomato soup
Friday, 1/6/12: Pot roast in crock pot with diced tomatoes and carrots; cheesy mashed potatoes, corn
Saturday, 1/7/12: Dinner with friends
Sunday: Grocery shopping trip; Chicken Stir Fry
Monday, 1/9/12: C is on his own since A and I have book club
Tuesday, 1/10/12: Meatloaf, new potatoes, corn

Pantry Challenge Goals

Jessica at  Good Cheap Eats (and Life as Mom) is hosting a pantry challenge for the month of January.  She also does once a month freezer cooking, which I am going to give a whirl next month.  She posted her goals of her Pantry Challenge here, and since we are going to try to eat from the pantry this month as well, I wanted to post my goals.

1.  Lower our grocery budget.  C and I are working on being more financially aware this year and are tracking our spending.  I have gotten into a terrible habit of spending money too much on groceries and letting things go to waste because they are not used in a timely manner.  My goal is to spend $75 a week on FOOD as opposed to $150.

2.  Clear out the pantry and cabinets for a new organization project.  Because, trust me folks, it NEEDS to happen.

3.  Lead a healthier lifestyle.  This includes not spending money on fast food and buying lunches out (or at school).
