Easter Recap

Easter weekend began on Saturday with a last-minute trip to see the Easter Bunny. For the picture I got from the actual bunny-people, Logan had a huge smile on his face.


After bunny-visiting, he died some eggs with his sisters. As Jamie would say, CONCENTRATION IS THE KEY!

Mommy Guilt

Two years ago, I made a really difficult decision to resign as the drama advisor for the high school where I teach. It was really tough on me, but I was planning a wedding, starting my administrative internship and one stepdaughter had very suddenly moved in with us (the youngest would come along two years later). When I resigned, my good friend and musical director stepped in and I knew my kids were in good hands. Unfortunately, this good friend lost her job due to district-wide cuts and my drama kids were given a new director.

Two weeks ago, the opportunity arose for me to take back over. Five weeks before our musical. Which happens to be West Side Story. With kids I really don't know. And yes, I took it on. We have 16 days to go until our show and I am fully confident that my kids can do this.

C and the girls have been nothing but supportive. In fact, C has told me to take over for next year as well. Unfortunately, I am at rehearsals until 6, 7, 8, 9, even 10 PM from now until mid-May.

And I am missing my baby boy. Some days I pick him from his sitter's and take him to rehearsal with me until C can come and get him and other days C gets him after work. Today, I cried during 2nd period in our office because I was missing him so much. I feel like a bad mom to him and the girls because I am never home. Torn in a million directions. Exhausted. And with some sort of allergy-thing going on that is causing my eyelids to be dry and irritated (WTF is THAT all about??).

So, if the blog is sparse the next few weeks, PLEASE stick with me because I will be back in full force soon!

Chipotle Honey Lime Pork Chops

This marinade was intended for a pork tenderloin. I would have had to sear it and then bake it in the oven but let's be honest. The less time I have to spend on dinner the happier I am these days. I decided to do some porkchops and then have C toss them on the grill! And let me tell you...I wish I would have made more of them because I am pretty sure we all would have had seconds! I served this with cilantro lime rice and corn. It would also be an excellent marinade for beef or chicken!
Chipotle Honey Lime Pork Chops
adapted from Beantown Baker

Ingredients
4 pork chops (any kind will do)
Juice from 6 limes
Zest from 2 limes
1/2 C honey
1 tbsp kosher salt
1 tsp garlic powder
2 chipotle chiles in adobo sauce, chopped
1 tbsp adobo sauce

Directions:
-Place porkchops in Ziplock bag to marinate
-Mix together lime juice, zest, honey, salt, and garlic powder. Stir to combine and pour over chops.
-To chops, add chiles and adobo sauce. Seal and marinate in fridge as long as possible
-Remove from fridge and allow to rise to room temp. Cook on grill until done.

Logan's Nursery

Logan's nursery is pretty much finished. I have a few more things to put on the wall, but for the most part, everything is up and I seriously love, love LOVE how it turned out. Everything came together wonderfully and I think it is something he can grow-up with and it won't seem to be a "nursery."

So there it is. I am so pleased with how it turned out and I am proud to say I painted the entire thing myself. It is perfect for my little man!

One year ago today...

A year ago today, April 9, 2o1o...it started as a faint line...

Logan: Four Months!

Little man, how is it you are four whole months old already?You are truly a delight to be around and your smile is truly infectious. You are already winning the hearts of everyone who meets you. It is a smile that lights up your entire face, as well as the faces of those around you.Soon after you had your three month birthday, you really "found" your hands. Before that, they would occasionally find their way into your mouth, but now? Constant. And holy cow, kid, you are LOUD when you are nom noming on them! You are grasping things (especially your giraffe-blanket stuffed animal thing) and bringing them into your mouth.
We have JUST recently heard you giggle for the first time. You are constantly cooing and making noises that sound like trapped giggles, but you laughed at Alexys on Monday night for the first time!Mama got excited and started you on a bit of rice cereal. At first, you cried and hated it. But now, you open your mouth for the spoon and lean towards it! Your pediatrician has cleared you to have cereal for breakfast and another solid at dinner. We tried peas and you actually didn't seem to mind them too much! We also put together your jumperoo, but you are still way too short for it and still too small for your highchair. During dinner you hang in your Bumbo or bouncy seat with us and laugh away.
We thought you had an ear infection last week so took you to the pediatrician. Your ears were clear but your gums are swollen and you are, in fact, teething! At your 4-month appointment, you weighed 14 lbs, 7 oz and shot up to 25 inches long! You are finally on the charts for height and are in the 50th percentile for everything.

Little man, you brighten each day with your smiles and there is nothing I love more than being your mommy. Thank you for being so amazing.

Menu Planning Monday!

Well, the girls are back from their mom's house so gone are our days of leftovers for lunch! And our food bill will once again rise. I swear, I am sometimes shocked and appalled by the amount that these kids eat!! I have the Mexican Lasagna already prepped and in the freezer, along with some other items for next week's dinner. It feels great to have most of our stuff ready for the next week as well!

Sunday: Chicken puffs, good ol' butter noodles, and fresh green beans, with a peach pie DESSERT puff! So good!
Monday: Grilled cheese and tomato soup
Tuesday: Nachos (leftover taco meat from the mexican lasagna I prepped)
Wednesday: Baked pasta with Caesar salad
Thursday: Macaroni and Cheese
Friday: Leftovers
Saturday: Pizza and a movie night
Sunday: Mexican Lasagna
