Shout Out

I just want to give a quick shout-out to Katie at Bower Power.  Hers is a blog I have only recently stumbled upon and I can't get enough of her decorating style and witty writing.  She is hilarious.

Anyway, I sent her an email asking some decorating advice and she was quick to respond with some ideas and her opinions about our upstairs bath.  Even though I really like the shower curtain, it is not working with the yellow tile we are going to be forced to keep for the next year or so.  What she sent me was amazing and I plan on putting it to good use once school is over!

So thanks again, Katie, for the great ideas!!

Words of Wisdom

In a moment of complete and utter insanity, I decided, just a few days after we started working on our house in March, that I would throw a housewarming party for our family and friends.

We invited over 100 people.  At the beginning of the week, I thought I was going to lose my mind.  I asked my mom and husband where in the hell they were to reel me in on this one.  I needed a good slap and someone to tell me to wait until August or something.

Our bathroom off of the family room had not even been TOUCHED, let alone was company-ready.

We finished at 1 AM Saturday night with the party beginning at 2 PM on Sunday.  I was a whirling-dervish, as were C and the kids, but everything came together.  In retrospect, and based on the advice of my parents (who throw several large parties a year), here are the things I would do differently, or will do differently the next time we throw a party:

1. Start no new projects five days before the party.  You can complete already in-progress things, but start NOTHING new.  This advice came from my parents who have thrown three graduation parties, given two weddings, and every year throw a huge picnic for the Fourth of July.  Not to mention they host Thanksgiving every year.  This was their biggest piece of advice in regards to party planning.
2. Make more cheesy potatoes.  2 pans were not enough.  I sent my brother to the store for more cornflakes as a back-up, but by that time,  most people had eaten.
3. People apparently like cake.  So I need to make more.  Because the chocolate cake with peanut butter frosting was gone in about three minutes.
4. Have more garbage cans set up.  Because we didn't even think about this, and we were scrambling.
5. Take more time to sit back and talk to your guests.

Pomp and Circumstance

Today I graduated.

OK, I walked for commencement, but received and empty folder because I still have one more class and comprehensive exams in August.

But, today I donned my weird Masters degree robe (totally bizarre sleeves) and hood that was reminiscent of Gandalf the Wizard and gladly accepted that empty folder.  

And soon...I will have a life again.

Menu Plan Monday!


I feel as if we are in a "food rut" so this weekend when making my grocery list, I tried to pull a few recipes I have not tried before. So...here we go!

Monday: Spring Asparagus and Lemon Fettucini
Tuesday: Boca chik'n patties and fries (I will be out for dinner)
Wednesday: Taco Junk
Thursday: Yankee Pot Roast in the crock pot
Friday: Not sure yet...no kids, so it is up in the air.
Saturday: First Communion party, so dinner out!

Berry Cobbler

I was digging around in my recipe box today, trying to find something to make for dessert for tonight. I always forget I have an actual recipe box; normally I rely on my many cookbooks or the internet for ideas and recipes. I have felt as if we are in a "food rut" lately, so I was trying to find something I have not made before, and I stumbled across this recipe. I wanted to make it because it sounded yummy and was a Weight Watchers recipe (since I went back and rejoined meetings again today). I have no idea where I actually got the recipe, but I had the points and servings written down, so I was all about it. It smelled amazing and I could not wait to try it. And it was a total hit with the entire family!! I served it with fat free Cool Whip on the side!


Berry Cobbler
Weight Watchers points: 4 per serving (1 C of fruit and 1 biscuit)

Filling:
2 C blackberries
2 C strawberries, hulled and halved
1/4 tsp salt
2 tbsp corn starch
1/4 C sugar

Biscuits:
2/3 C all-purpose flour
1 tsp sugar
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/8 tsp ground cardamom (I do not have this, so just omitted it)
1/2 C buttermilk

Directions:
-Preheat oven to 400.
-In a shallow, 2 quart ovenproof dish, stir berries, 1/4 tsp salt, cornstarch, and 1/4 C sugar.
-Bake until hot, about 5-10 minutes
-Prep biscuits: In a bowl, stir together flour, 1 tsp sugar, baking powder, baking soda, 1/4 tsp salt, and cardamom.
-Stir in buttermilk to form a sticky dough
-Remove fruit from oven and drop dough on fruit to form 4 biscuits.
-Bake about 25 minutes. Let sit 5 minutes before serving



Buffalo Chicken Lasagna

This is one of my husband's favorite dinners. OK, I admit it...mine too. J even ate the entire thing without complaining about the spiciness! We accompanied it with a salad and it was yummy! Unbelievably, it is a Weight Watchers dinner!


Buffalo Chicken Lasagna

12 Lasagna noodles (to save WW points, use whole wheat; I use regular)
2 lbs ground chicken
3 cups Hunts Four Cheese Spaghetti Sauce
1 cup mild buffalo wing sauce (I use Frank's Buffalo Wing Sauce...not so mild but amazing)
1 C or less water (the original recipe calls for 1 1/2 cups...it is too runny. Next time I will probably use 3/4 C)
15 oz nonfat ricotta cheese
1/2 cup egg substitute
9 slices 2% pepperjack cheese (which I can never find so I use regular)

Preheat the oven to 350 degrees. In a nonstick skillet, brown the ground chicken. When cooked, stir in sauces and water. In a small bowl, combine ricotta cheese and egg substitute. Spray a 9x13 pan. Layer a cup of the sauce mix on the bottom and arrange 4 noodles over the sauce. Layer with more sauce and the ricotta mixture. Repeat layers until you end with a layer of the sauce mixture. Cover and bake for 70 minutes. Uncover and place cheese slices on top and bake for another 15 minutes uncovered. Let stand 10-15 minutes per serving.
Serves 9
Approx. 6 points per serving

Step on the Scale Saturdays

In honor of recommitting to Weight Watchers today, I am declaring Saturdays "Step on the Scale" day. I will be attending my Weight Watchers meeting early on Saturdays with my mom, which will force me to be accountable on the weekends, which was my downfall before while doing WW.

So, until I find myself knocked up, I am back on plan in an attempt to become a healthier and happier me!

After 3 months of eating like an asshole...I weighed in at:
202.2

The last time I was at Weight Watchers I was 198.6, which was on January 29. A gain of 3.6 since then. And to be honest, I am ok with it, for the soul fact that I thought it was going to be way worse!
